I know the Bible says not to be "unequally yoked," (2 Corinthians 6:14) but what if I really love the person and isn’t a Christian? Can a relationship like that still work? What should I consider before making that decision? Please somebody help, I am about making this decision?

Truthfully, it won't work out.
Like you quoted from the scriptures that instructs us not to be yoked with unbelievers and we should keep the instructions.
Why? That's because at the ned of the day, we end up suffering from the consequences of our decisions.
Consider, your values and vision.
Is he/she aligned with them? Are you spiritually compatible?
Are your principles aligned together? If you're to carry out an assignment that the Lord instructs you to do, would your partner be for you or against you?
Anything outside the will of God doesn't bring rest.
